From Land to Sea: A Collaboration between Syrco BASÈ and Rumari

The partnership between Rumari and Syrco BASÈ presents a two-episode philosophical duet that highlights the splendours of the two restaurants
This has been a big year for Syrco BASÈ. Following a series of partnerships and accolades, the establishment joins forces with Raffles Bali’s Rumari for a unique four-hand collaboration. Starring two Michelin-starred chef Syrco Bakker and gastronomic maestro Gaetan Biesuz, this new partnership presents an invitation to delve into philosophical culinary explorations.
The flavourful affair is presented in two sessions, and Rumari is set to host the first one. Set to be held on September 9, 2024, the first episode embodies the theme of “Sea and Ocean.” The restaurant is situated on the highest point of Raffles Bali, which affords it unobstructed views of Jimbaran Bay and the tropical jungle around it. Guided by the 80/20 rule, which means that 80 percent of the ingredients are locally sourced while 20 percent are imported when necessary, Chef Biesuz and his team present authentic Southeast Asian cuisine in a contemporary fashion.
The second session will be held on October 4, 2024, at Syrco BASÈ. Helmed by Bakker, the restaurant takes pride in its principles of traceability, nature, and transparency. The last instalment of the collaboration is built on the theme of “Land, Jungle, and Mountain,” reflecting on the lush forests and verdant hills of Ubud.
Through these two two different themes, Bakker and Biesuz demonstrate their impeccable culinary expertise while bringing Bali’s myriad splendours to the table.

Bakker adds that the collaboration also serves as an opportunity to merge their culinary philosophies. “By drawing on the essence of the sea, ocean, land, jungle, and mountain, we are set to create a truly immersive dining experience that reflects the very soul of Bali. Our mutual dedication to supporting local communities, upholding ethical excellence, and delivering exceptional experiences forms the cornerstone of this collaboration,” he explains.
