Rossini’s Collaborates with Two-Michelin Starred Chef Giuseppe De Vuono for a Sicilian-Inspired Feast

Chef Giuseppe will craft indulgent dishes inspired by his cherished culinary experiences in vibrant locales such as Sicily and Hong Kong, offering a truly one-of-a-kind dining experience at Rossini’s, the renowned Italian restaurant at Sheraton Grande Sukhumvit, a Luxury Collection Hotel.
Taking place on September 13 and 14, 2024, experience the culinary prowess of Chef Giuseppe De Vuono, accompanied by captivating melodies, at Rossini’s. The acclaimed restaurant at Sheraton Grande Sukhumvit, a Luxury Collection Hotel, will present the ‘Sicilian Symphony of Culinary Overture,’ a unique dining event in collaboration with Chef Giuseppe, who leads Hong Kong’s celebrated two Michelin-starred restaurant, Octavium.
Born and raised in Sicily, Chef Giuseppe went on to study at the prestigious Hotel Higher Education Antonello da Messina where he won the Silver Medal at the European Association of Hotel and Tourism Schools’ Annual Conference and Competition at the age of just 17. After graduating, he moved to London, UK, to hone his skills at several Michelin-starred restaurants and five-star hotels, including Locanda Locatelli and The Connaught Hotel.
In 2018, he joined Tosca di Angelo at The Ritz-Carlton in Hong Kong, which retained its Michelin star for three consecutive years. He later worked with culinary powerhouse, Umberto Bombana, at Otto e Mezzo Bombana HK, the first and only Italian restaurant outside of Italy to receive a three Michelin star ranking. Now, he holds the title of Executive Chef at Octavium.
The culinary journey begins with the ‘Ouverture’ – a savoury amouse bouche followed by a selection of enticing canapés. Guests will enjoy arancino ragout, black mussel caviar, tomato ricotta with olives, and sarde beccafico, caponata, and salsiccia. Following this, the ‘Allegro’ course features Carabinieros red prawn stuffed zucchini flowers; ‘har gow’ with Oscietra caviar—a delightful Italian twist on Hong Kong’s renowned dumpling—and slow cooked wagyu cheek paired with salsa tonnata and Melanosporum black truffle.
The journey continues with ‘Andante,’ paccheri with Sicilian-style sunday squid ragu. Next, ‘Scherzo’ introduces Hokkaido hamachi with morel mushrooms and as sweet and sour sauce, served alongside a Mayura beef tenderloin and Sicilian eggplant parrmigiana with eggplant caviar. Finally, the gastronomic adventure concludes with ‘Allegro Con Fuoco.’
Speaking about the exciting dining collaboration, Chef Giuseppe shared that his ultimate goal is to share a piece of home and his celebrated restaurant, Octavium, with diners in Bangkok. He divulged that the special dishes he has envisioned are inspired by fond memories of his time cooking in Sicily, Hong Kong, and beyond.
The ‘Sicilian Symphony of Culinary Overture’ is priced at 5,400++ per person for lunch, 6,800++ baht per person for dinner (food only), and 12,600++ per person inclusive of the premium beverage pairing. Some of the wines one can expect include the 2018 Nervi Conterno Vigna Valferana, Italy; 2022 Vietti, Roero Arneis, Piedmont, Italy; and 2020 Tenuta Capofaro Malvasia di Salina Passito Sicily, Italy.
